A roof that holds the promise of incredible flavours and warm hospitality.

Held annually, our collaborative event—this year titled Chefs on the Range—brings together chefs from across Spicers Retreats to connect, inspire one another, and offer guests the chance to savour their distinct cooking styles.

This year, the event unfolded across two venues: @spicerstamarindretreat and @spicersclovellyestate. Beside the fire pit at Tamarind Retreat, our Sous Chef James Taylor crafted canapés, including the 'Sheep’s Milk Beignet' and '@9dorffarms Chicken Liver Parfait.'

Guests enjoyed a selection of beverages, including French champagne, beer, and gin from @sunshineandsons_spirits to complement the dishes.

It was a pleasure to work alongside Head Chef Jake Knauth of @scenicrimtrail as we kicked off this unique and inspiring culinary event.

- 9Dorf chicken liver parfait + spiced brioche + smoked date + tobacco + maple

Our market garden-grown chilies are utilised both in the kitchen and at the bar. For example, our mixologists infuse spirits like tequila to create spicy margaritas, and they also dry the chillies to produce chilli salt. Additionally, our team craft unique syrups, using lemongrass and chilli, which are featured in our Spritz cocktails and non-alcoholic beverages.
